1Cut turkey tenderloin into 6 even pieces, season with salt & pepper to coat.
2Turn Instant Pot on Saute Mode. Add 1 tsp olive oil, add onions, saute 3-4 min. Add garlic, cilantro, stir 2 min. Add carrots, green peppers, stir 2-3 min. Add yellow squash, broth, beans, chiles, corn and seasonings.
3Nestle the turkey pieces in the broth and close the IP. Set to Manual, 15 minutes, Instant Release.
4Open the Instant Pot and remove the turkey pieces. Shred turkey with forks or use Bear Claws (as pictured). Put the turkey back in the IP and stir thoroughly. You can then set to Keep Warm until ready to serve.
