Sweet & Spicy Sauce
Instant Pot Sweet & Spicy Shredded Chicken
1Season chicken breasts with salt and pepper on each side. Set aside to make sauce.
2Combine sauce ingredients. Adjust heat level with Sriracha as needed. Set aside
1Turn Instant Pot on Saute' mode.
2Saute garlic, ginger, and veggies in walnut oil for 3-4 minutes until just soft and then turn off your Instant Pot (Keep Warm/Cancel Button)
3Add chicken breasts, tomato paste, and rice vinegar to the pot.
4Pour sweet & spicy sauce over the chicken
5Close the lid to the Instant Pot and set to Poultry. Make sure it is set to sealing. Quick release when time is up (venting).
6Remove chicken breasts to a cutting board and shred with two forks or with Bear Claws, as pictured.
7Add shredded chicken back to the pot. If the sauce is too thick for your liking, you can use the keep warm or saute' feature to let it thin out a bit.Serve with rice, lettuce cups, cauliflower rice, or whatever your family enjoys!
Serves up to 6. Feel free to adjust heat levels of the Sriracha. For a time-saver, use my pre-bagged Miraroix idea or buy already cut up. Could also omit veggies altogether. 6 Smart Points per serving!
