1Rinse dried pinto beans under cold water and pick out any broken beans.
2Turn Instant Pot on Saute mode. Add olive oil to pot with onions and garlic for about 4 minutes until soft.
3Add one tablespoon of white vinegar to the pot and scrape up any brown bits from the onions and garlic.
4Add all remaining ingredients. Set Instant Pot to Manual for 60 minutes.
5Open Instant Pot lid and give it a good stir. Then, try to get at least one cup of the liquid that is pooled at the top and save it. Set aside.
6After some cooling down, take the IP to the sink and try to drain off most the the remaining liquid.
7Transfer beans to a bowl that is safe for mixing or use a stand mixer. Using a hand or stand mixer, mix the beans with some of the liquid, little by little until desired consistency. Add about a teaspoon of salt or more if preferred.
8Squeeze a lime over it all and mix together.
I had smoother/creamier beans in the Vitamix, but the hand mixer works well too. Personal preference on this one! I served this side dish with these delish INSTANT POT CARNITAS-STYLE PORK!
