1Turn Instant Pot to Saute Mode. Add oil and Mirepoix. Saute 3 min. Add ham, saute another 2 min.
2Add cauliflower, garlic, saute 2 minutes.
3Add all remaining ingredients, close Instant Pot. Set to Manual for 12 minutes. Makes sure it is it SEALING mode. Use quick release. (Venting Mode)
5Remove Bay leaf. Serve in soup bowl or mug, top with parmesan (optional).

This dish stands up great on it's own but could also be served over a bed or rice or cauliflower rice!
