1Add all ingredients to IP or Slow Cooker. (make sure to use just the juice of the lemon, no seeds or rind) For Instant Pot- High Pressure, 20 min, Quick Release. For Slow Cooker- 4 Hours High or 8 Hours Low.
2Remove chicken from IP or cooker and place on large cooking board. There will be some liquid left in the pot. Shred chicken with forks or bear claws.
3Serve chicken in lettuce wraps, over rice, cauliflower rice, or wrapped in a tortilla. Would also be delicious in a salad once cooled. Can use leftover liquid if serving with a starch.
4We enjoyed this topped with feta, avocado, and sliced watermelon radish.
