1Turn Instant Pot to Saute mode, high heat. Add oil.
2Add ground turkey to pot and begin to break into small pieces with a wooden spoon until browned. Add diced onions and celery. You could definitely use the Make-ahead mirapoix* as well, if you don't mind the carrots. Cook about 2 minutes, then add poblanos.
3Once the veggies are mostly soft, add tomatillos and give it a good stir. Cook 1 more minute. Add chicken stock, garlic. Turn off Instant Pot.
4Add remaining ingredients to the pot (except corn). Don't forget your lime and seasoning! Turn on Manual 15 minutes, quick release.
5Optional: Stir frozen corn into hot pot and let warm through before serving.
