1Turn Slow cooker or Instant Pot on Saute mode. If using a slow cooker with no saute function, saute in a pan on your stove over medium heat. Once heated, add oil, and saute mirapoix or diced onions.
2Add green and jalepeno peppers and ground bison. Cook until browned.
3Turn Slow Cooker or Instant Pot off. (If using saute pan, set cooked vegetables aside)
4Add all remaining ingredients. Turn Slow Cooker on High Heat for 4 hours or Low Heat for 8 hours. If using Instant Pot, use chili setting, quick release.
5Top with desired toppings such as: Sour cream, diced avocado, shredded cheese, jalepenos, Greek yogurt, tortilla chips, etc
