1Cut chicken breasts into small "nuggets", about one inch thick. Throw into a large bowl and add egg whites.
2Put quinoa and panko in a shallow bowl and mix together with salt, pepper, and onion powder.
3Spray Cooking Basket with non-stick cooking spray. Using tongs, dip the egg white-coated chicken into the quinoa mixture and add to air fryer in batches.
4Set air fryer to 360 for 10 minutes on the timer. Check if chicken is cooked through. 10 minutes works perfectly in the Phillips Air Fryer with small cubes.
If you don't have an air fryer, Bake in oven on 375 for 20 minutes or until cooked through!
Two chicken breasts makes about 18 nuggets.
