When I became a mom, I pictured my kids eating everything I eat. I swore I would be different than the moms I had overheard complaining their kids eat only from the beige food group. Certainly, my hypothetical children would eat kale chips instead of goldfish. My hypothetical children would sit quietly in a restaurant and order from the regular menu. And my hypothetical children would be thrilled to try my new cauliflower (insert all-the-rage food trend such as cauliflower pizza, rice, or other) dish and ask for seconds.
3 picky children 5 and under later….I struggle on a daily basis to get them to eat ANYTHING. Like, any real food at all. I truly believe they survive on grapes and air. I’ve tried bribing. I’ve tried only serving one meal and you have to eat that (which resulted in massive meltdowns and retaliation). I’ve tried the excessively complicated cookbooks about sneaking veggies into food, but that was a huge waste of time, money, and energy.
If you have cracked the code on getting your kids to eat healthy, BRA-freaking-VO. I mean it. I applaud you. I WANT THAT LIFE! I’ve been able to come up with recipes that my kids will actually eat and that my husband and I enjoy. Best of all, they fit into our shared journey in healthy eating.
These waffles are made with the most basic Waffle iron. I got it 10 years ago as a wedding gift and it hasn’t failed me once!
